Chakli is made from basic flours. You can use any of the flour of your choice but basically the main ingredient is rice flour. Flour mixed with aromatic spices makes it a super tasty snack to have during teatime. Be it chai time, rainy season or festival season specially Diwali, chakli is a good healthy option to opt for.
Chakli is prepared specially during the festive season in all the houses, which bring back the memories of family gathering and enjoyment. Every household has its unique type of recipes. There are different taste and aroma of chakli. If it is eaten freshly fried and gives an altogether different taste and flavor.

We have eaten market chakli but sometimes they taste hard while eating but in this homemade chakli we have used malai/fresh cream and ghee, which will make this chakli very soft and delicious in taste. For making this chakli healthy and tasty we have used 3 different flours i.e. wheat, jowar and rice flour. Jowar flour will make this chakli more nutritious and healthier.
Ingredients for Making Instant Crispy and Soft Homemade Chakli:
1 bowl wheat flour
1 bowl rice flour
1 bowl jowar flour
3 spoon malai
3 spoon ghee
salt as per taste
2 teaspoon turmeric powder
3 teaspoon red chilli powder
1/2 bowl soaked sesame seed / white sesame
Water
oil
How to Make Instant Crispy and Soft Homemade Chakli:
1. Take one bowl of wheat flour, 1 bowl of jowar flour and 1 bowl of rice flour
2. Take 3 tablespoons of fresh malai. This malai is taken out from your daily milk
3. Take 3 tablespoons of ghee. Melt it before use
4. Take salt as per taste. I have used 2 teaspoons.
5. Take 2 teaspoon of turmeric powder
6. Take 3 teaspoon red chili powder
7. Take ½ bowl soaked sesame seeds. I have soaked sesame seed before one hour in lukewarm water
8. Now mix everything properly
9. Now knead a soft dough. Knead it properly to make it crispier and tastier. Don’t keep the dough hard, it should be soft to give a crispy taste
10. Now apply oil on dough and let it rest for 10 minutes
11. Now take chakli maker and grease it properly
12. Put dough inside it
13. Make round shape chakli and press the ends so that it does not gets separated or break
14. Heat oil in a pan

15. Now add chakli in oil and fry it on low flame properly from both the sides till it gets golden brown and crispy. Don’t fry it on high flame otherwise it will remain uncooked from inside. Don’t over fry otherwise it will turn dark brown and don’t taste good
16. Once get fried take it out and keep it in an airtight container once it gets cool down
Tips to Be Followed:
· To make chakli soft and crispy you have to add fresh malai/cream. To keep the taste fresh. make sure to use fresh malai taken out 2 to 3 days ago or on the same day.
· Instead of using oil, use ghee in the dough to give it a soft and crispier taste.
· You can use any of the flour of your choice. But the main ingredient is rice flour. You can make it with only two ingredients, like rice flour and gram flour.
· Knead the dough soft to make it crispy and soft.
· Let the dough rest for at least 10 minutes.
· Adding soaked sesame will make the chakli taste more delicious.
· While frying make sure to fry it on low flame and don’t over fry it as the taste will not come the way it should be. Keep it golden brown.
· If you want to give it a spicy flavor you can add garlic-green chili-ginger paste. Make a smooth paste and then add it to your dough.
