Ingredients require for the preparation:
2 bowl Suji/semolina
1 bowl curd
2 to 3 tablespoon gram flour/besan
Water
1 bowl grated bottle gourd/lauki
Ginger garlic green chili paste
Boiled corn
Chopped onion
Chopped capsicum
Grated peanut
Coriander leaves
Salt as per taste
1 teaspoon red chili powder
1 teaspoon coriander powder
1/4 teaspoon turmeric powder
1 teaspoon dry mango powder
½ teaspoon sugar
Eno
Oil
Sesame seed
Mustard seed
Curry leaves
How to make instant suji/rava/semolina mix veg handvo recipe:
1. In a bowl add suji/rava, besan and curd. Now add the required amount of water and mix it till it forms a thick consistency batter.
2. Let the batter rest for at least 10 minutes. It will help the handvo have a tender texture.
3. After 10 minutes now add grated bottle gourd, ginger garlic green chilli paste, boiled corn, onion, capsicum, grated peanut, coriander leaves.
4. Now add masalas- red chilli powder, coriander powder, turmeric powder, dry mango powder, sugar and salt as per taste.
5. Mix the batter properly. Add water if required to make a semi thick batter.
6. At last just before preparing handvo, add eno and 1 tablespoon of water to activate it. Gently mix the batter. Eno will make the handvo soft from inside. Handvo batter is ready to cook now.
7. Take a dosa pan or kadhai, heat it properly.
8. Spread 1 tablespoon oil on the pan, for tempering add sesame seed, mustard seed and curry leaves. Let it crackle then add one to two ladle of handvo batter on the pan and spread it evenly.
9. Let it cook for 10-12 minutes from one side on medium to low flame.
10. Once it gets cooked flip it and cook another side until it gets crispy and golden brown.
11. Once instant mix veg handvo is cooked take it out and serve it with your favourite chutney or ketchup.
